OUR PHILOSOPHY

Our story

Nagamasa

Good food begins with care.

We want your motsunabe experience in Hakata to exceed your expectations.

At every step, we keep the people who will enjoy our food in mind.

When explaining our dishes or speaking with you at your table, we see things from your perspective. Whether it is your first visit or you return often, we want you to feel at ease and enjoy your meal.

“That was delicious. Let’s come back.” Through our food and hospitality, we strive to create moments that leave you feeling this way. That is the care at the heart of Nagamasa.

Care begins with the broth.

First-brew bonito and kelp dashi, and house-made chicken stock simmered from roasted wings and carcasses. We prepare each broth to suit its flavor, tasting as we go to bring it to the finish.
